BAKED GARLIC PARMESAN CHICKEN BREASTS

  • 2 tbsp olive oil
  • 1 to 2 garlic cloves minced
  • 1 cup dry whole-grain bread crumbs
  • 2/3 cup parmesan cheese grated
  • 1 tsp dried basil
  • 1/4 tsp freshly ground black pepper plus more for seasoning the chicken
  • 6 boneless, skinless chicken breast halves
  • lightly salt to taste

Method
 

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 x 13 inch baking dish.
  2. Blend olive oil and garlic in a shallow dish. Mix bread crumbs, parmesan cheese, basil, and 1/4 teaspoon black pepper in another dish. Season chicken, dip in oil, then bread crumbs. Arrange in baking dish and top with remaining bread crumbs.
  3. Bake for 30 minutes or until chicken is no longer pink and juices run clear.

Notes

For extra flavor, add a pinch of red pepper flakes to the bread crumb mixture.
