Banana Bread without Baking Soda

A simple and delicious banana bread recipe that skips the baking soda, resulting in a slightly denser but equally satisfying loaf. Perfect for using up ripe bananas!

  • 1/2 cup salted butter room temperature
  • 1 cup white sugar
  • 1/2 cup mashed bananas about 2 medium bananas
  • 2 eggs
  • 1 Pinch Salt
  • 2 cups self rising flour

Method
 

  1. Preheat oven to 325*F
  2. Grease one 9 inch loaf pan and set aside.
  3. Cream butter, sugar & bananas together well.
  4. Add eggs and salt and mix, scraping sides as needed.
  5. Add flour 1/2 cup at a time, scraping sides as needed.
  6. Pour batter into a loaf pan and bake for 35 minutes.
  7. Add foil to top of loaf and bake for an additional 30 minutes or until a toothpick inserted into the middle comes out clean.
  8. Slice up, slather with butter and devour!

Notes

For a richer flavor, use browned butter. Let the butter cool slightly before creaming with the sugar and bananas.
