Ingredients
  

Meat
  • 1 lb ground beef
Vegetables
  • 4 cups cauliflower rice (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1/2 cup green peas (optional)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
Garnish
  • as needed Fresh cilantro

Method
 

  1. Cook onion and garlic in olive oil until softened, about 3 minutes.
  2. Add ground beef, season with spices, and cook until browned, about 6–8 minutes.
  3. Stir in cauliflower rice and cook until tender, 5–7 minutes.
  4. If using, add green peas and cook for 2–3 minutes.
  5. Transfer mixture to a baking dish, top with cheese, and bake at 375°F (190°C) for 10–15 minutes until bubbly. Garnish with cilantro before serving.

Notes

For a lower sodium version, reduce salt and use low-sodium ingredients.
