  • 1/4 cup coconut flour
  • 1/2 cup erythritol or your preferred keto sweetener
  • 1/4 cup unsweetened almond milk
  • 3 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup melted coconut oil or butter
  • 1/2 cup chopped walnuts or pecans (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, eggs, almond milk, and melted coconut oil until smooth.
  3. Whisk together dry ingredients: almond flour, coconut flour, erythritol, baking powder, baking soda, cinnamon, and salt.
  4. Combine wet and dry ingredients; fold in nuts if desired. Pour into pan.
  5. Bake for 45-55 minutes; cool before slicing.
