Blueberry Banana Bread

Ingredients
  

Butter
  • ½ cup butter, softened (1 stick)
Sugar
  • 1 cup granulated sugar
Eggs
  • 2 large eggs (beaten)
Bananas
  • 3 ripe bananas ripe bananas (mashed)
Flour
  • 2 cups flour
Baking Soda
  • 1 teaspoon baking soda
Salt
  • ½ teaspoon salt
Blueberries
  • cups fresh blueberries tossed in 1 tablespoon of flour

Method
 

  1. Preheat oven to 375°F (190°C). Spray two loaf pans with nonstick spray.
  2. Cream butter and sugar until light. Beat eggs and add to mixture. Mix in mashed bananas.
  3. Sift flour, baking soda, and salt. Gradually add dry ingredients to wet, mixing until just combined.
  4. Gently fold in floured blueberries. Divide batter into pans.
  5. Bake at 375°F for 15 minutes, then reduce to 350°F and bake for 30 minutes until a toothpick comes out clean. Cool before serving.

Notes

Use ripe bananas for best flavor and moisture.
