- Preheat oven to 375°F (190°C). Spray two loaf pans with nonstick spray.
- Cream butter and sugar until light. Beat eggs and add to mixture. Mix in mashed bananas.
- Sift flour, baking soda, and salt. Gradually add dry ingredients to wet, mixing until just combined.
- Gently fold in floured blueberries. Divide batter into pans.
- Bake at 375°F for 15 minutes, then reduce to 350°F and bake for 30 minutes until a toothpick comes out clean. Cool before serving.
Notes
Use ripe bananas for best flavor and moisture.
