  • 2 cups cooked rice
  • 2 cups cooked shredded chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1/2 cup chopped green onions (optional)
  • 1/2 cup sour cream (for serving, optional)

Method
 

  1. Combine rice, chicken, beans, corn, tomatoes, taco seasoning, and salsa in a bowl.
  2. Transfer mixture to a freezer-safe dish or bag, top with cheese.
  3. Seal and label, then freeze up to 3 months.
  4. Thaw overnight, bake at 350°F (175°C) for 30-35 minutes.
  5. Top with green onions and serve with sour cream if desired.
