Ingredients
  

Dry ingredients
  • 2 cups all-purpose flour
  • 1 tbsp orange zest (from 1 large orange)
  • ¾ cup granulated sugar
  • tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
Wet ingredients
  • ¾ cup orange juice (freshly squeezed preferred)
  • cup vegetable oil
  • 1 large egg
Add-ins
  • cups fresh or frozen cranberries (no need to thaw)
  • ½ cup chopped nuts (walnuts or pecans) (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Mix dry ingredients and orange zest in a bowl.
  3. Whisk orange juice, oil, and egg; combine with dry ingredients.
  4. Fold in cranberries (and nuts, if using). Pour into pan and smooth.
  5. Bake for 50–60 minutes; cool before slicing.

Notes

For extra flavor, add a splash of orange liqueur to the batter.
