Method
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- Mix dry ingredients and orange zest in a bowl.
- Whisk orange juice, oil, and egg; combine with dry ingredients.
- Fold in cranberries (and nuts, if using). Pour into pan and smooth.
- Bake for 50–60 minutes; cool before slicing.
Notes
For extra flavor, add a splash of orange liqueur to the batter.
