  • 3 pieces ripe bananas, mashed
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Cream together butter, cream cheese, sugars until fluffy.
  3. Add bananas, eggs, vanilla; beat until combined.
  4. Mix in dry ingredients; fold in nuts if using.
  5. Pour batter into pan; bake 60-70 minutes. Cool before serving.

Notes

For extra flavor, add a dash of cinnamon or nutmeg.
