  • 1.5 lbs cooked chicken, shredded or cubed
  • 1 medium head of cauliflower, cut into florets
  • 4 oz cream cheese, softened
  • 0.5 cup sour cream
  • 0.5 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup chopped green onions
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • Salt and pepper to taste
  • 0.25 cup crumbled cooked turkey bacon Optional

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Steam or boil cauliflower until tender-crisp (8-10 minutes). Drain well.
  3. Combine cream cheese, sour cream, and mayonnaise until smooth.
  4. Add chicken, cauliflower, cheeses, green onions, garlic powder, onion powder, salt, and pepper. Mix well.
  5. If using, stir in turkey bacon.
  6. Pour mixture into a greased 9x13 inch baking dish.
  7. Bake for 20-25 minutes, or until heated through and cheese is melted.
  8. Let stand for a few minutes before serving.

Notes

For an extra cheesy flavor, add a layer of shredded cheese on top during the last 5 minutes of baking.
