Method
- Place chicken breasts in the bottom of a crock pot.
- Combine soup, cream cheese, tomatoes, broth, Parmesan, garlic, seasoning, salt, and pepper in a bowl. Mix well.
- Pour the sauce over the chicken breasts.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked.
- Shred the chicken with two forks directly in the crock pot.
- Stir in the chopped spinach and cook for an additional 15-20 minutes, until spinach is wilted.
- Serve over pasta, rice, or mashed potatoes.
Notes
For a richer flavor, use full-fat cream cheese and heavy cream instead of chicken broth.
