  • 1.5 lbs boneless, skinless chicken breasts
  • 10.75 ounce condensed cream of chicken soup
  • 8 ounce cream cheese, softened
  • 1/2 cup sun-dried tomatoes, oil-packed, drained
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh spinach, chopped

Method
 

  1. Place chicken breasts in the bottom of a crock pot.
  2. Combine soup, cream cheese, tomatoes, broth, Parmesan, garlic, seasoning, salt, and pepper in a bowl. Mix well.
  3. Pour the sauce over the chicken breasts.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked.
  5. Shred the chicken with two forks directly in the crock pot.
  6. Stir in the chopped spinach and cook for an additional 15-20 minutes, until spinach is wilted.
  7. Serve over pasta, rice, or mashed potatoes.

Notes

For a richer flavor, use full-fat cream cheese and heavy cream instead of chicken broth.
