Ingredients
  

Rice and Broth
  • 2 cups uncooked long-grain white rice
  • 4 cups chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
Spices
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
Main Protein
  • 1 lb boneless, skinless chicken breasts
Vegetables and Cheese
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheese (optional)
Garnish
  • Fresh parsley for garnish (optional) Fresh parsley

Method
 

  1. Mix rice, broth, soup, and spices in a bowl.
  2. Pour half into crockpot, add chicken, then top with remaining rice mixture.
  3. Add vegetables on top, cover, and cook on low 6-7 hours.
  4. Stir in cheese during last 30 minutes if desired, then serve garnished with parsley.

Notes

For extra flavor, add herbs or spices as desired.
