Dough
  • 250 g all-purpose flour
  • 125 g unsalted butter, softened
  • 100 g brown sugar
  • 75 g granulated sugar
  • 1 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 0.25 tsp baking powder
  • 0.25 tsp salt
  • 1 tsp vanilla extract
  • 1 egg egg

Method
 

  1. Preheat oven to 180°C and line a baking sheet.
  2. Cream butter with sugars, then add egg and vanilla.
  3. Mix in dry ingredients to form dough, chill for 30 mins.
  4. Roll out dough, cut shapes, and place on sheet.
  5. Bake for 10-12 minutes until edges are golden. Cool before serving.
