Delicious Letterbox Brownies Recipe

  • 150 g unsalted butter plus extra for greasing
  • 150 g dark chocolate 70% cocoa solids, broken into pieces
  • 3 large eggs
  • 200 g golden caster sugar
  • 75 g plain flour
  • 25 g cocoa powder
  • 1 Pinch salt
  • 100 g chocolate chips or nuts Optional

Method
 

  1. Preheat oven to 180°C (160°C fan/Gas Mark 4). Grease and line a 20cm square baking tin.
  2. Melt butter and chocolate, stirring until smooth. Cool slightly.
  3. Whisk eggs and sugar until light and fluffy.
  4. Whisk melted chocolate mixture into egg mixture until combined.
  5. Sift in flour, cocoa powder, and salt. Gently fold until just combined.
  6. If using, fold in chocolate chips or nuts.
  7. Pour batter into the tin and spread evenly.
  8. Bake for 20-25 minutes, until the top is slightly cracked.
  9. Cool completely in the tin before cutting into squares.
  10. Cut into squares and enjoy!

Notes

For extra fudgy brownies, slightly underbake them. They will continue to set as they cool.
