Method
- Preheat oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper.
- Mix dry ingredients: flour, baking powder, baking soda, salt.
- Whisk oil and sugar until combined, then add eggs, vanilla, mashed bananas, and sour cream. Mix well.
- Stir in dry ingredients until just combined, then fold in shredded coconut and walnuts.
- Pour batter into pan, top with extra coconut and walnuts, then bake for 45-55 minutes. Cool before slicing.
Notes
For extra flavor, sprinkle additional shredded coconut and walnuts on top before baking.
