  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 pound pasta such as penne, rotini, or fettuccine
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream optional, can substitute with more chicken broth for a lighter dish
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • to taste Salt and pepper
  • Optional Red pepper flakes for a little heat

Method
 

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken and cook until browned and cooked through (about 5-7 minutes). Season with salt and pepper.
  4. Add minced garlic to the skillet and cook for about 30 seconds, until fragrant.
  5. Pour in chicken broth and heavy cream (if using). Bring to a simmer.
  6. Stir in Parmesan cheese until melted and the sauce is smooth.
  7. Add cooked pasta to the skillet and toss to coat with the sauce.
  8. Stir in chopped parsley and red pepper flakes (if using).
  9. Serve immediately and enjoy!

Notes

For a richer flavor, use freshly grated Parmesan cheese. You can also add vegetables like spinach or broccoli for extra nutrients.
