- Heat olive oil in a large skillet over medium heat. Add the ground chicken and cook until it starts to brown, breaking it up with a spatula (about 5–6 minutes).
- Stir in the diced onion and garlic. Cook for 2–3 minutes until the onion softens and turns transluc
- Add diced red bell pepper, soy sauce, hoisin sauce (if using), sesame oil, ginger, and crushed red pepper flakes. Stir everything well and let it cook for another 3–4 minutes until the peppers are tender and the mixture is evenly coated.
- Add salt and pepper if needed. Remove from heat and let the filling cool slightly for easier handlin
- Carefully separate lettuce leaves and rinse thoroughly. Pat them dry with a paper towel.
- Spoon the chicken mixture into each lettuce cup. Top with fresh cilantro leaves, sliced radishes, and spring onions if desired.
Notes
For a spicier kick, add more crushed red pepper flakes or a dash of sriracha to the chicken mixture.
