Eggless Banana Bread

Ingredients
  

Wet ingredients
  • 2 tablespoons milk
  • ¼ teaspoon white vinegar
Dry ingredients
  • 190 g plain flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • pinch salt
  • pinch ground cinnamon, optional
  • 100 g soft brown sugar
Main ingredients
  • 4 medium bananas around 400g without peel
  • 120 ml olive oil or neutral oil
  • 1 teaspoon vanilla essence or extract

Method
 

  1. Preheat oven to 180°C (356°F). Line a loaf tin with baking paper.
  2. Mix vinegar with milk and set aside. Mash bananas and combine with oil, vanilla, and milk.
  3. Mix dry ingredients in a bowl, then fold in wet ingredients until just combined. Pour into the tin.
  4. Bake for 45-50 minutes until a skewer comes out clean. Cool before slicing.

Notes

Use ripe bananas for best flavor and sweetness.
