Method
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned and cooked through.
- Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in garlic, chili powder, and cumin and cook for 1 minute more.
- Add diced tomatoes, black beans, and corn to the skillet. Bring to a simmer.
- Reduce heat and simmer for 10-15 minutes, or until the flavors have melded.
- Season with salt and pepper to taste.
- Serve hot, garnished with cilantro, lime wedges, and avocado, if desired.
