  • 1 lb Chicken Breast cut into bite-sized pieces
  • 1 tbsp Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Red Bell Pepper chopped
  • 14.5 oz Diced Tomatoes undrained
  • 15 oz Black Beans rinsed and drained
  • 1 cup Corn Kernels fresh or frozen
  • 1 tsp Chili Powder
  • 0.5 tsp Cumin
  • to taste Salt and Pepper
  • Optional Cilantro, Lime wedges, Avocado for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook until browned and cooked through.
  3. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Stir in garlic, chili powder, and cumin and cook for 1 minute more.
  5. Add diced tomatoes, black beans, and corn to the skillet. Bring to a simmer.
  6. Reduce heat and simmer for 10-15 minutes, or until the flavors have melded.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with cilantro, lime wedges, and avocado, if desired.

Notes

Adjust the amount of chili powder to your preferred spice level.
