  • 4 boneless, skinless chicken breasts about 1.5 lbs
  • 4 cloves fresh garlic minced
  • 2 tbsp olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 2 tsp fresh thyme or rosemary chopped
  • 4 cups fresh spinach

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Combine garlic, olive oil, lemon juice, salt, and pepper. Coat chicken.
  3. Sear chicken in skillet for 3-4 minutes per side.
  4. Bake for 20-25 minutes until 165°F (75°C).
  5. Add spinach on top of chicken to wilt in the last few minutes.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before cooking.
