  • 2 medium bell peppers any color, chopped
  • 2 cups broccoli florets chopped
  • 1 large carrot thinly sliced
  • 3 stalks green onion chopped (separate white and green parts)
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 tbsp olive oil or avocado oil
  • 0.25 tsp red chili flakes optional
  • 1 tbsp fresh lime juice
  • Salt and pepper to taste

Method
 

  1. Prep ingredients: slice chicken, chop vegetables, mince garlic, and grate ginger.
  2. Make sauce: mix soy sauce, sesame oil, lime juice, and chili flakes (optional); set aside.
  3. Heat wok/skillet, add oil until shimmering.
  4. Cook chicken in a single layer for 2 minutes, then stir and cook until no pink remains (5-7 minutes); set aside.
  5. Add more oil if needed; stir-fry garlic, ginger, and white parts of green onion for 30 seconds.
  6. Add broccoli, carrots, and bell peppers; stir-fry for 4-5 minutes until tender-crisp.
  7. Return chicken to pan; pour sauce over ingredients and toss; cook 2-3 minutes until sauce thickens; season with salt and pepper.
  8. Remove from heat; garnish with green parts of green onions; serve immediately with lime wedge.

Notes

Adjust the amount of red chili flakes to your preference for spice. Serve with cauliflower rice for a low-carb option.
