Ingredients
  

Bananas
  • 3 pieces very ripe bananas, mashed
  • 1/2 cup gluten-free all-purpose flour blend
  • 1/4 cup almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/3 cup melted coconut oil (or vegetable oil)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mash bananas, then mix in oil, sugars, egg, and vanilla.
  3. Combine dry ingredients separately, then fold into wet mixture.
  4. Fold in walnuts or chocolate chips if using, then pour batter into pan.
  5. Bake for 45-55 minutes, cool, then slice and serve.

Notes

Use ripe bananas for best flavor and sweetness.
