Ingredients
  

Fruits and Vegetables
  • 2 medium ripe bananas, mashed
  • 1 cup grated zucchini (squeezed dry)
  • 2 large eggs
Wet ingredients
  • 1/4 cup melted coconut oil or vegetable oil
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
Dry ingredients
  • 1 1/2 cups gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups chopped nuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, zucchini, eggs, oil, honey, and vanilla in a bowl.
  3. Whisk dry ingredients together in another bowl.
  4. Combine wet and dry ingredients; fold in nuts or chocolate chips if desired.
  5. Pour batter into pan and bake for 50-60 minutes until a toothpick comes out clean.
  6. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.
