  • 1 lb lean ground beef (93%)
  • 2 medium sweet potatoes, peeled and diced
  • 1 sliced avocado
  • 1 cup cottage cheese
  • 1 diced yellow onion
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp)
  • 2 tbsp hot honey
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 0.25 tsp ground cinnamon
  • to taste Salt and pepper
  • Optional chopped cilantro, red pepper flakes, lime juice

Method
 

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 40–45 minutes, stirring halfway.
  2. Heat 1 tbsp olive oil in a skillet over medium heat. Sauté diced onion until soft, about 3–4 minutes.
  3. Add ground beef to the skillet. Cook for 6–8 minutes, breaking apart. Stir in taco seasoning, salt, and pepper. Cook until browned.
  4. Assemble bowls: sweet potatoes on bottom, then ground beef, avocado slices, and a scoop of cottage cheese.
  5. Drizzle hot honey generously over each bowl. Add optional garnishes if desired.
  6. Serve immediately and enjoy while warm.

Notes

Adjust the amount of hot honey to your preferred spice level. For a vegetarian option, substitute the ground beef with black beans or lentils.
