Fruits and Nuts
  • 3 medium ripe bananas
  • 1 cup crushed pineapple drained
  • 1 cup shredded coconut
  • 1/2 cup chopped macadamia nuts
Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 cup granulated sugar
Wet Ingredients
  • 2 large eggs
  • 1/4 cup melted butter or coconut oil
  • 1 tsp vanilla extract
Salt
  • pinch salt

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mash bananas, then mix in melted butter, sugar, eggs, and vanilla.
  3. Whisk flour, baking soda, and salt; fold into wet ingredients.
  4. Stir in pineapple, coconut, and macadamia nuts.
  5. Pour batter into pan and bake for 60-70 minutes; cool before slicing.

Notes

For extra flavor, toast the macadamia nuts before adding.
