Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix dry ingredients in a bowl.
- Whisk wet ingredients until smooth.
- Combine wet and dry, then fold in optional coconut and nuts.
- Pour batter into pan and bake for 60-65 minutes. Cool before serving.
Notes
For added flavor, sprinkle with extra shredded coconut on top before baking.
