Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix pumpkin, honey, melted butter, eggs, and vanilla until smooth.
- Whisk dry ingredients together in a separate bowl.
- Combine wet and dry, fold in nuts if using.
- Pour batter into pan and bake 50-60 mins until a toothpick comes out clean.
- Cool 10 mins, then transfer to wire rack. Slice and serve.

Store in an airtight container for up to 3 days or freeze for longer storage.
