Ingredients
  

  • 1 lb cooked shrimp peeled, deveined, tails removed, chopped into bite-sized pieces
  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 0.25 red onion finely diced
  • 0.25 cup fresh cilantro chopped
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons fresh lime juice (from 1-2 limes)
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper or to taste
  • red pepper flakes Optional: pinch for heat

Method
 

  1. In a large mixing bowl, combine the chopped cooked shrimp, diced avocado, halved cherry tomatoes, finely diced red onion, and chopped cilantro.
  2. In a small separate bowl, whisk together the extra virgin olive oil, fresh lime juice, salt, and black pepper (and red pepper flakes if using) until well combined.
  3. Pour the dressing over the shrimp and avocado mixture.
  4. Gently toss all ingredients together until everything is evenly coated, being careful not to mash the avocado.
  5. Taste and adjust seasoning if necessary.
  6. Serve immediately, or chill for a short period before serving for best flavor.

Notes

For the best texture, serve this salad immediately after preparing. If chilling, add the avocado just before serving to prevent browning.
