- In a large mixing bowl, combine the chopped cooked shrimp, diced avocado, halved cherry tomatoes, finely diced red onion, and chopped cilantro.
- In a small separate bowl, whisk together the extra virgin olive oil, fresh lime juice, salt, and black pepper (and red pepper flakes if using) until well combined.
- Pour the dressing over the shrimp and avocado mixture.
- Gently toss all ingredients together until everything is evenly coated, being careful not to mash the avocado.
- Taste and adjust seasoning if necessary.
- Serve immediately, or chill for a short period before serving for best flavor.
Notes
For the best texture, serve this salad immediately after preparing. If chilling, add the avocado just before serving to prevent browning.
