Hearty Ricotta Pasta Bake

Ingredients
  

Pasta
  • 300 g pasta (penne or rigatoni)
Cheese
  • 400 g ricotta cheese
  • 250 g mozzarella cheese, shredded
  • 100 g grated Parmesan cheese
Sauces and Vegetables
  • 2 cups marinara sauce
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
Seasonings
  • to taste Salt and pepper
Garnish
  • optional Fresh basil for garnish

Method
 

  1. Preheat oven to 180°C (350°F). Cook pasta until al dente, then drain.
  2. Mix ricotta, half of mozzarella, Parmesan, spinach, garlic, oregano, salt, and pepper.
  3. Combine cooked pasta with ricotta mixture. Spread half of marinara in a baking dish.
  4. Pour pasta mixture over sauce, top with remaining marinara and mozzarella. Cover and bake 25 mins, then uncover and bake 10-15 mins until bubbly.
  5. Let cool slightly, garnish with basil if desired, then serve.

Notes

You can add extra vegetables or cheese for more flavor.
