Method
- Heat olive oil in a large skillet over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and sun-dried tomatoes and cook for 1 minute more.
- Stir in cannellini beans and great northern beans.
- Pour in vegetable broth and bring to a simmer.
- Reduce heat and stir in heavy cream (or coconut cream) and Parmesan cheese (if using).
- Season with salt and pepper to taste.
- Simmer for 5-10 minutes, or until sauce has thickened slightly.
- Stir in fresh basil.
- If adding, stir in cooked chicken breast or Italian beef sausage.
- Serve hot.
Notes
For a richer flavor, use roasted garlic instead of minced.
