  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 (15-ounce) can great northern beans, rinsed and drained
  • 1 cup vegetable broth
  • 1/2 cup heavy cream or coconut cream (for dairy-free)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste
  • Optional: Cooked chicken breast or Italian beef sausage for added protein

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and sun-dried tomatoes and cook for 1 minute more.
  4. Stir in cannellini beans and great northern beans.
  5. Pour in vegetable broth and bring to a simmer.
  6. Reduce heat and stir in heavy cream (or coconut cream) and Parmesan cheese (if using).
  7. Season with salt and pepper to taste.
  8. Simmer for 5-10 minutes, or until sauce has thickened slightly.
  9. Stir in fresh basil.
  10. If adding, stir in cooked chicken breast or Italian beef sausage.
  11. Serve hot.

Notes

For a richer flavor, use roasted garlic instead of minced.
