Ingredients
  

Dry Ingredients
  • 1 ½ cups almond flour not almond meal
  • ¼ cup coconut flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon optional
Wet Ingredients
  • 2 large ripe bananas medium-sized, darker bananas preferred
  • 2 large eggs
  • ½ cup plain Greek yogurt or vanilla for extra sweetness
  • cup monk fruit sweetener or erythritol adjust to taste
  • 1 tsp vanilla extract
Add-ins
  • ½ cup chopped walnuts or pecans
  • to taste sugar-free chocolate chips
  • a sprinkle oats

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mash bananas, then mix with eggs, Greek yogurt, sweetener, and vanilla.
  3. Whisk almond flour, coconut flour, baking soda, salt, and cinnamon. Fold into wet ingredients.
  4. Stir in nuts, chocolate chips, and oats if using. Pour batter into pan.
  5. Bake for 45–55 minutes, cool, then enjoy.

Notes

For extra flavor, add a dash of vanilla or cinnamon.
