Ingredients
  

Filling
  • 2 cups cooked chicken breast shredded, or use rotisserie chicken
  • 1 cup shredded mozzarella cheese
  • 0.5 cup shredded cheddar cheese
  • 2 cloves garlic minced
  • 0.25 cup cream cheese softened
Other
  • 1 tablespoon olive oil
  • 4 large low-carb tortillas or wraps
  • 1 tablespoon fresh parsley chopped
  • to taste Salt and pepper
  • 1 handful baby spinach optional

Method
 

  1. Preheat skillet with olive oil; warm tortillas in microwave.
  2. Combine chicken, cheeses, cream cheese, garlic, parsley, salt, pepper, and spinach (if using).
  3. Divide mixture among tortillas, roll tightly, tucking in sides.
  4. Cook wraps seam-side down for 2-3 minutes per side until golden and cheese is melted.
  5. Slice and serve hot, garnish with parsley if desired.

Notes

For extra flavor, add a dash of hot sauce to the chicken mixture.
