Ingredients
  

Chicken Salad
  • 1.5 lbs cooked chicken breast, shredded
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 can black beans, rinsed and drained (15 ounce)
  • 1 can corn, drained (15 ounce)
  • 1/2 cup chopped cilantro
Dressing
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • to taste Salt and pepper
Optional
  • Avocado, for serving Optional
  • Tortilla chips, for serving Optional

Method
 

  1. Combine chicken, bell pepper, onion, beans, corn, and cilantro in a bowl.
  2. Whisk lime juice, olive oil, chili powder, cumin, garlic powder, salt, and pepper in a small bowl.
  3. Pour dressing over chicken salad and mix well.
  4. Divide chicken salad into meal prep containers.
  5. Add avocado to each container before serving (optional).
  6. Serve with tortilla chips or enjoy as is.

Notes

Adjust the amount of chili powder to your preferred level of spiciness.
