Wet Ingredients
  • 0.5 cup unsalted butter, softened (or vegetable oil)
  • 0.75 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
Main Additions
  • 3 ripe bananas, mashed bananas
  • 1 cup grated zucchini
  • 0.5 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan.
  2. Mix dry ingredients in a bowl; set aside.
  3. Cream butter and sugars, then beat in eggs and vanilla.
  4. Stir in mashed bananas and grated zucchini.
  5. Fold in dry ingredients and nuts if using; pour into pan.
  6. Bake for 60-70 minutes, cool before slicing.
