Ingredients
  

Oats and Dry Ingredients
  • 3 cups rolled oats to be ground into oat flour
  • 2.75 cups oat flour
  • 1/3 cup maple syrup
  • 2 eggs eggs
  • 2 tsp cinnamon
  • 1/8 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 tsp baking powder
Wet Ingredients
  • 3 large bananas mashed
  • 0.25 cup unsweetened vanilla almond milk

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Grind oats into fine oat flour using a food processor.
  3. Mix mashed bananas, maple syrup, eggs, and almond milk in a bowl.
  4. Combine dry ingredients and then add wet mixture, mixing until smooth.
  5. Pour batter into a parchment-lined loaf pan and bake for 50-55 minutes.
  6. Cool completely before slicing to prevent crumbling.
