Ingredients
  

olive oil
  • 1 tablespoon olive oil
vegetables
  • 1 diced onion
  • 2 sliced carrots
  • 2 sliced celery stalks
seasonings
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
chicken
  • 1 pound boneless, skinless chicken breasts
liquids
  • 6 cups chicken broth
pasta
  • 1 cup egg noodles
seasoning
  • to taste Salt and pepper
garnish
  • for garnish Fresh parsley

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook until softened, about 5 minutes.
  3. Stir in garlic, thyme, and rosemary; cook for 1 minute.
  4. Add chicken and broth; bring to a boil, then simmer for 20 minutes.
  5. Shred chicken, return to pot, add noodles, cook until tender, then season and serve garnished with parsley.

Notes

Use fresh herbs if available for extra flavor.
