Method
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; cook until softened, about 5 minutes.
- Stir in garlic, thyme, and rosemary; cook for 1 minute.
- Add chicken and broth; bring to a boil, then simmer for 20 minutes.
- Shred chicken, return to pot, add noodles, cook until tender, then season and serve garnished with parsley.
