Ingredients
  

Pasta
  • 8 oz penne pasta
Meat
  • 1 lb Italian beef sausage casings removed
Vegetables
  • 1 medium onion diced
  • 2 cloves garlic minced
Canned Goods
  • 1 can crushed tomatoes 28 oz
Dried Herbs
  • 1 tsp dried oregano
  • 1 tsp dried basil
Seasonings
  • to taste Salt and pepper
Cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
Garnish
  • optional Fresh basil for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Cook pasta until al dente, then drain.
  2. Cook sausage until browned; add onion and cook until softened. Stir in garlic, then add tomatoes, oregano, basil, salt, and pepper. Simmer 10 minutes.
  3. Mix cooked pasta with sausage mixture and 1 cup mozzarella. Transfer to a greased baking dish. Top with remaining mozzarella and Parmesan.
  4. Bake for 25-30 minutes until bubbly and golden. Let cool slightly before serving. Garnish with basil if desired.

Notes

For a vegetarian version, substitute sausage with sautéed vegetables or plant-based sausage.
