Method
- Preheat oven to 375°F (190°C). Cook pasta until al dente, then drain.
- Cook sausage until browned; add onion and cook until softened. Stir in garlic, then add tomatoes, oregano, basil, salt, and pepper. Simmer 10 minutes.
- Mix cooked pasta with sausage mixture and 1 cup mozzarella. Transfer to a greased baking dish. Top with remaining mozzarella and Parmesan.
- Bake for 25-30 minutes until bubbly and golden. Let cool slightly before serving. Garnish with basil if desired.
Notes
For a vegetarian version, substitute sausage with sautéed vegetables or plant-based sausage.
