Ingredients
  

Dry ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Wet ingredients
  • 1 cup granulated sugar
  • 3 ounces cream cheese, softened
  • 1 large egg, beaten
  • 3 teaspoons vanilla extract
  • ½ cup sour cream
  • 1 can (20 oz) crushed pineapple, drained reserve 2 tablespoons juice
  • 1⅓ cups powdered sugar (for glaze)
  • 2 tablespoons reserved pineapple juice (for glaze)

Method
 

  1. Preheat oven to 350°F (175°C); grease a loaf pan.
  2. Mix dry ingredients; beat cream cheese and sugar, then add egg and vanilla.
  3. Stir in sour cream, then fold in pineapple; pour into pan.
  4. Bake for 55–60 minutes; cool in pan, then transfer to rack.
  5. Mix powdered sugar with pineapple juice; drizzle over cooled bread.

Notes

For best results, use fresh pineapple and ensure the bread is fully cooled before glazing.
