Ingredients

  • 1 ½ cups all-purpose flour
  • teaspoon salt
  • 2 teaspoons baking powder
Wet ingredients
  • ½ cup softened butter
  • ¼ cup granulated sugar
  • 2 large eggs
  • ¼ cup pineapple liquid from crushed pineapple can
  • 2 tablespoons milk
Additional ingredients
  • 1 cup crushed pineapple, drained
  • 1 cup confectioners’ sugar
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Sift flour, salt, and baking powder.
  3. Cream butter and sugar, then add eggs and mix.
  4. Add pineapple liquid and dry ingredients alternately, then fold in crushed pineapple and milk.
  5. Pour batter into pan and bake for 50-55 minutes. Cool and drizzle with glaze.
