Method
- Combine mayonnaise, sriracha, lime juice, and soy sauce. Mix until smooth.
- Heat olive oil in a skillet. Add shrimp and sprinkle with soy sauce, honey, garlic powder, smoked paprika, black pepper, and red pepper flakes (if using). Cook shrimp for 3–4 minutes on each side.
- Divide cooked rice among four bowls. Top with shrimp, carrots, cucumbers, radishes, avocado, and green onions. Drizzle with spicy mayo and sprinkle with sesame seeds and cilantro (if desired).
- Add pickled ginger and nori strips as garnishes (if desired). Enjoy!

Adjust the amount of sriracha to your preferred spice level.
