Ingredients
  

Meat
  • 2 lbs pounds beef stew meat cut into bite-sized cubes
  • 1 lb pounds baby potatoes halved or quartered if large
Dairy
  • 4 tbsp tablespoons unsalted butter
  • 2 tbsp tablespoons unsalted butter for searing
Produce
  • 6 cloves cloves garlic minced
Liquids
  • 1/2 cup cup beef broth
  • 1 tbsp tablespoon Worcestershire sauce
Herbs & Spices
  • 1 tsp teaspoon dried thyme
  • 1 tsp teaspoon dried rosemary
Other
  • Salt and pepper Salt and pepper to taste
  • 2 tbsp tablespoons olive oil
Garnish
  • Fresh parsley chopped parsley for garnish

Method
 

  1. Sear beef cubes in hot olive oil until browned, then transfer to slow cooker.
  2. Melt butter in skillet, sauté garlic until fragrant, then add beef broth, Worcestershire, thyme, and rosemary. Pour over beef in slow cooker.
  3. Add potatoes to slow cooker, top with remaining butter, and cook on low for 6-7 hours.
  4. Adjust seasoning, garnish with parsley, and serve warm.

Notes

For extra flavor, sear the beef well and adjust seasoning before serving.
