  • 2 large eggs
  • 1/3 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1.5 cups whole wheat flour
  • 1/2 cup chopped walnuts (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, eggs, applesauce, and vanilla until combined.
  3. Whisk together dry ingredients; add to wet ingredients and stir gently.
  4. Fold in walnuts if using, then pour batter into pan.
  5. Bake for 50-60 minutes; cool before slicing.
