  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup ricotta cheese
  • 1/2 cup mini chocolate chips
  • 1/4 cup chopped pistachios (optional)
For dusting
  • to taste powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Mix dry ingredients; cream butter and sugar, then add egg and extracts.
  3. Stir in ricotta, then combine with dry ingredients. Fold in chocolate chips and pistachios.
  4. Drop spoonfuls onto baking sheet, bake 12-15 minutes until golden.
  5. Cool cookies, then dust with powdered sugar before serving.
