Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 0.25 cup maple syrup
  • 0.25 cup almond milk
  • 1/3 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1.5 cups gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 0.5 cup walnuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, maple syrup, almond milk, melted coconut oil, and vanilla extract.
  3. Whisk together gluten-free flour, baking soda, salt, and cinnamon.
  4. Combine dry and wet ingredients; fold in walnuts or chocolate chips if desired.
  5. Pour batter into pan, bake for 45-55 minutes, cool before serving.

Notes

Use ripe bananas for best flavor and sweetness.
